Here’s a recipe for a super fun, super jiggly treat for kids! These blueberry jigglies (recipe curtsey of The Kitchen Table by Nutiva blog) are made out of just a couple simple ingredients, including real blueberries and gelatin for a jiggly, marshmallow-Jell-O texture. Read on for a healthy, silly snack kids are sure to enjoy.Ingredients: 

¼ cup Coconut Milk Manna½ cup fresh blueberries1 2/7 cup water3 packets monk fruit extract1 pinch salt3 tablespoons gelatinSteps:

  1. Mix everything but the gelatin together in a food processor for 2 minutes.
  2. Set aside ½ cup of the total mixture.
  3. Simmer the rest of the mixture for 5 minutes on medium heat, then turn off heat and leave on stove.
  4. Add gelatin to mixture set aside from earlier and whisk together.
  5. Pour warm mixture into gelatin mixture slowly, and pulse in food processor.
  6. Pour mixture into ice trays (or any other moldable form) and freeze for at least an hour.
  7. Remove from freezer and enjoy your blueberry jigglies!
